Chickpea - feta balls
2 potatoes
1 can of chickpeas (350g)
2 carrots
1/2 leek
3 tbs olive oil
2 garlic gloves
1 lemon zest
100g feta ( or mix with goat cheese like I did)
1 egg
salt, pepper, chili/cayenne/piment d'espelette
1. Peel, dice and boil potatoes until fully cooked.
Drain the potatoes and chickpeas, smash together.
2. Peel and grate the carrots, dice the leek.
Sauté the carrots and leek in olive oil, until soft.
4. Mix the mashed potatoes/chickpeas and sautéd carrots/leeks in a bowl, add
minced garlic, lemon zest and spices. Mix well, add the egg last and leave it to rest in the fridge.
5. Heat up the oven to 225 celsius degrees, make little 3cm balls either with two spoons or by hand.
Let it bake until golden, about 15 mins.
Serve with rice, salad and greek yoghurt.
This makes a very light lunch, healthy and vegetarian. I like to try new recipes, since I cook basically everyday. The days I'm working, I have home cooked meal with me. We don't do often restaurants, because
in France you pay easily 15€/person for lunch at the restaurant and 25-30€/person in a cheaper restaurant for dinner. Without the drinks, of course! So the time we go out for a restaurant, it's a special occasion with friends.
Do you eat often in the restaurants? Or do you prefer to cook by yourself?

ReplyDeleteWe eat out far too often. I'm trying to let go of eating at the work cafeteria as their food is not the best for vegetarians and cook my own lunches instead.
Yess :) This recipe is delicious, I really liked the goat cheese inside - me who hated goat cheese before!
DeleteIt's good thing to take a picnic with you, can easily cook all meals during weekend for nbext week. I make sometimes a batch of veggie "steaks" and put it to the freezer, easy to warm it at work and make couscous with it.
